Abstract: Sugar became a staple food over the past two centuries and average annual consumption per head is now about 20 kg. Worldwide demand continues to rise and approaches 140 Mt per year. This comes from only two plants – cane and beet. To meet increasing needs, all aspects of how to produce these crops effi ciently have been widely researched and work continues rapidly in all countries where they are grown. Researchers publish results in scientifi c papers, spread through national and international journals. Thus much of the latest information is not readily available to the people involved with the crops. It is therefore necessary periodically to review research and assemble results in an accessible form.
